5 separate dining operations
Food T/O in excess of £100K p/w @ busy times
This is a hands on Exec Chef position managing a core brigade of 14 & two separate kitchens.
Responsibilities as Exec Chef include:
Working closely with the various head of departments you will be responsible for driving the entire catering operation through immediate, medium & long term planning
Maintaining & driving consistently high standards of produce through all of the various food operations
As Exec Chef you will be in charge of all back of house operations including Health and Safety, menu development, recruitment & staff training
You should be highly organised and posses excellent communication skills to ensure that relations with the front of House Management team are maintained and developed further.
The Executive Chef must be able to demonstrate a strong financial awareness regarding budgets and menu costing.
The ideal Executive Chef will:
You will have a proven track record at Head, Executive or Executive Sous Chef level in a similar operation
Possess excellent management skills, flair, initiative, first rate culinary ability and have the drive and determination to achieve success
Be driven and focused on first class standards across every aspect of the operation.
Have shown loyalty and longevity throughout their career.
Have excellent planning and organisational skills.
Have excellent personal presentation and be consummately professional at all times.
