the Yoruba’s. Hence, Yoruba meals are predominant in the state. These include foods
like Ewedu, Gbegiri, Efo Riro, Amala, Iyan (pounded yam), Ifokore e.t.c.
Recipe
for Ifokore
Ingredients:
§  Water
yam
§  Fish
of choice
§  Pepper
§  Onions
§  Palm
oil
§  Bouillon
cube
§  All
purpose seasoning
Procedure:
§  Peel
the yam and cut into thick stripes for easy handling.
§  Wash
the yam in water
§  After
washing, the yam will be slippery. Dry with paper towel if you can’t handle it
§  Grate
the yam using the smallest part of the grater
§  The
product would be stretchy.
§  Add
a pinch of salt and a pinch of all purpose seasoning and mix thoroughly.
§  Cover
with a lid and set aside.
§  Wash
you fish and cut to smaller sizes and boil.
§  After
boiling, fillet the fish and set the stock aside.
§  Cut
pepper and onions, and blend until smooth.
§  Place
pot on fire at medium heat, and palm oil and allow heating up.
§  Pour
blended sauce gently into hot oil, and the stock from the fish, this stock
already contains seasoning so no seasoning would be necessary at this point.
§  Cover
with a lid and cook for about 10 minutes
§  Taste
for seasoning and add to taste
§  Cook
for an additional 5 minutes
§  Now
add the grated water yam in small balls.
§  Cover
with a lid, reduce the heat and cook for about 15 minutes
§  Turn
gently; add fish and meat if desired.
§  Cover
and cook for another 5 minutes.
§  Enjoy.
Recipe
for efo riro
Ingredients:
§  Pepper
§  Onions
§  Spinach
§  Vegetable
§  Palm
oil
§  Assorted
meat
§  Stock
fish
§  Locust
beans (iru)
§  Curry
powder
§  Salt
Procedure:
§  Season
meat/fish and keep stock aside.
§  Make
sauce from pepper and onions
§  Place
a pot on medium heat and add some palm oil
§  When
the oil is hot and bleached, pour sauce gently into hot oil
§  Cover
with a lid to avoid splashes
§  After
about 2 minutes, add bouillon cubes, curry powder, locust beans and stock from
meat and fish and mix thoroughly
§  Cover
and leave to cook for about 10 minutes
§  Add
stock fish, cook for some minutes and taste to check if seasoning is
sufficient. Add if not.
§  Add
meat of your choice preferably diced
§  Add
fish if desired
§  Gently
toss with a cooking spoon
§   Cover and leave for about 5 minutes
§  Add
vegetables of choice
§  And
cook for few minutes
§  Enjoy
Recipe
for steam sponge pudding
Ingredients:
§  100g
sugar
§  10g
baking powder
§  100g
butter or margarine
§  150g
flour
§  Milk
§  2
eggs
§  Mixed
fruit
Procedure:
§  Cream
the butter and sugar in a bowl until fluffy and almost white
§  Gradually
add the beaten eggs, mixing vigorously
§  Sieve
the flour and baking powder
§  Gradually
incorporate into the mixture as lightly as possible
§  Add
milk until desired texture (dropping consistency) is achieved
§  Add
your mixed fruit
§  Place
in a greased pudding basin
§  Cover
securely with grease proof paper
§  Steam
for 1-1 and a half hour
§  Turn
out onto a flat dish and serve with a suitable dish
