Policy document from Nigeria national environmental health regulation, 2007 on food sanitation

i.              
Every food item, including cooked
food shall be produced, handled, prepared and served in a state that shall
maintain its wholesomeness adhering to the highest hygiene standard.
ii.              
Food, cooked or uncooked including,
bread, cake etc. shall not be exposed or sold to the public without the
facility from where such food is produced being approved by the environmental
health authority having jurisdiction in that area:
a)             Any
person wishing to operate a food outlet shall apply and obtain a permit from
environmental health authority in which he intends to operate.
b)             Such
permit must be renewable annually.

iii.              
A food premises must be kept clean
at all times and waste generated shall be stored in approved sanitary
condition.
iv.              
All food premises shall be
adequately ventilated and all openings screened of all flies and other vermin
and all external doors shall be made self closed.
v.              
Every food premises shall have
adequate sanitary conveniences with a reasonable distance from the premises.
vi.              
Washing hand basins that allow for
easy cleansing shall be provided for individual use.
vii.              
Wiping cloths or hand towels,
disposable paper shall be provided for individual customer.
viii.              
All food premises shall have
adequate portable water supply at all times.
ix.              
Every food handler shall be
medically examined and issued with medical certificate fitness signed by a
qualified medical practitioner; such certificate shall be renewable every six
(6) months.
x.              
If environmental health officer in
his opinion observes a food handler to be suffering from an infection or open
wounds, he shall inform such handler to submit himself for medical
re-examination by a qualified medical practitioner and shall prevent him from
further operation till such food handler is deemed fit to function in that
capacity.
